‘The Stack’

Introducing a new take on the delicious Mexican style ‘quesadillas’…

Quesadillas are one of my favourite foods – typically served as two flour tortillas stuffed with a choice of filling and melted cheese, heated on both sides in a pan. ‘The Stack’ takes the standard quesadilla to the extreme with three layers of different fillings and four tortillas! It is also quick and fun to make…

Begin by browning off each tortilla in a hot pan. With the last tortilla heating up in the pan, add the first layer of filling while it still sits in the pan. For me this was slices of breaded chicken, sliced cherry tomatoes and sour cream & chive spread. Place the next tortilla over the top, then add pre chopped and cooked red pepper, onion and mushrooms. Add the next tortilla, then flip the whole thing over so that the bottom tortilla doesn’t burn. Add the final layer of filling, which for me was slices of chorizo and grated cheese.

When the last tortilla is placed on the top, move the stack onto a baking tray, sprinkle with a little more cheese and some herbs, then put into a pre-heated oven for 10 minutes to melt the cheese, crisp up the tortillas and to make sure all of the fillings are hot.

Et voila!

It would be delicious served with salad and humous, not much else is needed as it is so filling! So many different variations of fillings could be experimented with, such as brie and bacon, tuna and sweetcorn, pulled pork and barbecue sauce, or even just a plain veggie version.
