New Wheels & Homemade Churros

Last weekend was amazing!

After recently upgrading my car to a 4×4 to enable me to tow, and since getting our trailer, we are able to get Dizzy out and about to events and other fun things.

On Sunday we traveled to a local show and entered a ridden coloured horse class where Dizzy came 2nd, and we also came 2nd in the 2ft9 show jumping 🙂 She was quite happy chilling out on her own, munching hay, and was very good for our first trip out alone.

This is just the start of very exciting things to come… Can’t wait to get her out and do more now. This weekend we are entering a 10 mile fun ride with 30 jumps along the way. We are both gonna be knackered!

We have had some lovely evenings with friends now that summer seems to finally have arrived. Barbecues are the best.

Last week as part of Mexican Night at a friends house, I made homemade churros for dessert 🙂 I was surprised at how easy they are to make, here’s the recipe I used below…

homemade Churros

  • 200g flour
  • 300ml milk
  • 40g unsalted butter
  • pinch of salt
  • 2 eggs
  • a few drops of vanilla extract
  • vegetable oil for deep drying

Method

Bring the milk, butter & salt to a boil.

Stop the heat, add flour, mixing well.

Add the beaten eggs little by little, mix well. Add the vanilla extract for flavour.

Spoon the mixture into a piping bag with a large star shaped nozzle. Pipe the mixture out onto pre-cut parchment paper squares, into any desired shape.

Deep fry in hot vegetable oil for about 4 minutes, removing the parchment paper when it unsticks in the oil.

Place the churros on a wire rack to drain, and cover in cinnamon sugar while still warm.

Serve with melted chocolate – yum!
