Since it’s a new year and a new start, I’ve jumped onto the ‘healthy eating’ regime and want to cook tasty new meal ideas. I saw this recipe for turkey patties on the TV the other day and thought I’d give it a go last night.
You need (to make 4 medium sized patties):
- 250g Turkey mince
- 6 Chopped spring onions
- 1 shredded courgette
- 2 Garlic cloves
- Handful of chopped coriander
- 1tsp Cumin powder
- Salt & Pepper
- 1 egg
What I loved about this recipe is it is so quick and easy, and tasty too!
Mix all of the ingredients together in a bowl, and then bind together into a sticky mixture using the egg.
This is the fun part… Using your hands, form round flat shapes into any size you like and then place into a hot pan with a little melted butter. Turn over once browned on the outside, and repeat on the other side. Then place the patties onto a baking tray and into a pre-heated oven until cooked thoroughly, until still juicy but not dry.
Serve on a bed of rocket and enjoy!
I enjoyed my patties with a selection of salad and avocado – delicious!
They could also be turned into turkey burgers with a bread bun, and mini patties make great party food too. I’ll definitely be using this recipe a lot in the future!
