Folksy Friday: In The Kitchen

I had a lot of fun choosing my favourite items from Folksy this week. The items I have chosen come from shops full of more fantastic handmade products so be sure to pay them a visit.

This week’s Folksy Friday theme relates to where I have been for a lot of this week. I’ve had a lot of ideas for hearty winter meals but decided as it’s not quite so cold enough yet, to stick with something ‘in between’ summer and winter.

They are so easy to make, and went down so well that I have made two batches this week!

To make your own:

Bake potatoes in oven wrapped in foil until soft, cut in half, hollow out soft potato, put skins back in oven until crispy. Meanwhile, dice and cook bacon to mix into bowl of soft potato with grated cheese, salt & pepper. Spoon soft potato mixture back into crispy skins, top with more cheese, bake until golden brown. Delish!

I was also busy making these cupcakes for a barn barbecue last weekend. Baking heaven! The cakes went down equally as well and looked great on my new display stand. I could just eat one now… will have to make some more!
