Bank Holiday Fun

I’ve enjoyed 2 great bank holiday weekends but now it’s time to start getting back into a routine, which I think I will be thankful of – yesterday felt like a ‘non’ day!

We’ve been fortunate to have lovely warm weather 2 weekends in a row, although this weekend had a bit of a chilly breeze. Molly is loving being out and about in the garden.

During the bank holiday breaks we had lots of parties…

Lots of fun in the garden playing Jeronimo (jiant Jenja), soaking up the sunshine, cooking on the barbecue, and drinking wine…

…even until late at night with the fire burner roaring and toasting marshmallows.

One of my new ‘signature’ recipes are now these delicious homemade potato wedges (below) that I made several times over the bank holiday weekends, and they went down extremely well! I peeled and sliced the potatoes into shape, covered them lightly in olive oil in a deep baking tray, then coated in Cajun BBQ seasoning, cracked black pepper and rock salt, with a few garlic cloves placed around them. Once they were soft inside and crispy on the outside I took them out of the oven and left them to go cold. They were delicious with dips!

I need to head to the post office with the weekend’s orders today, I bet it will be packed with people doing a similar thing!

    Mmm those wedges look [and sound] scrummy! Sounds like a lovely couple of long weekends. Don't forget we have another one at the end of the month – it will be a 4 day one for me as I have the friday off too :D x
